That is such a clever moment, because it really shows the instant of forgetting, or "waking".
The whole film is so brilliantly written and constructed, and perfectly acted by Guy Pearce.
I just had a glance at a draft version of the script online.

"Just two. So far."
... "At least you're honest about ripping me off."
(well, I seem to remember him saying "ripping me off" ... but maybe I translated it. The draft says "cheating".)
Guy Pearce, Joe Pantoliano and Mark Boone Jr are excellent.
Mark Boone Jr has quite a small role, but he plays it brilliantly. It's difficult to pick out a single line.
Well, Carrie-Anne Moss is good, too. "You don't remember me."
I like so much that tiny thing she does with the forks as they sitting at the table.
Strangely enough, my favourite line might be:
"Lenny!"
when Teddy comes to pick him up at the hotel. That grin, because he knows he hates being called that. It's not an especially significant line, but it is a great introduction to the character.
The black and white sequence. Guy Pearce is fabulous making that documentary-style voiceover. He conveys the intense confusion, fear and panic when he suddenly catches himself talking on the phone, and says:
"- who is this?!!"
Apparently, the condition is real. It must be hell. But the film makes a fascinating and thought-provoking exploration of the problem: what do you do when every 2 minutes you find yourself in an unfamliar situation - how did I get here? who are these people? can I trust them? how can I trust them?
What a work of genius this film is!
